Managed by Sodexo, Iberdrola catering services at EIMA, CAMPUS (Madrid), and LARRASKITU (Bilbao), obtained the EcoCook Sustainable Restaurant Certification (version 2020) level 4.

EcoCook® is the only Swiss certification for the catering sector that recognizes the sustainable practices at all levels. For the customers, EcoCook® is a guarantee of these practices and commitments in terms of sustainability.

The EcoCook team made up of experts in sustainability, certification and communication, has developed the “EcoCook Sustainable Restaurant Certification Program” that allows restaurants to:

  • Improve their practices
  • Reduce their environmental impacts
  • Reduce their operating costs
  • Increase their sales

Managed by Sodexo, Iberdrola’s catering services meet all mandatory criteria as well as a large number of optional criteria. This enabled them to achieve level 4 of EcoCook Sustainable Restaurant certification in each of the 3 sites. There is, however, room for improvement.

Below is an overview of Iberdrola’s and Sodexo’s actions and commitments!

Food and beverages, Menus and cooking

  • Endangered species and genetically modified organisms are excluded. To do this, Sodexo is working with a sustainable fish and shellfish procurement guide and monitors the presence of GMOs in foods that may present a risk.
  • All recipes are prepared by limiting fats, salt, sugar, colourings, and any other additive, or flavour enhancer.
  • 67% of fruits and vegetables are seasonal.
  • 87% of the food used is neither processed nor of industrial origin.
  • A system is being put in place to indicate the origin of food and to integrate this information into menu planning so that the guest has access to this information in the restaurant.
  • Any risk of contamination is minimized thanks to its HACCP training and control system.
  • Suppliers and subcontractors are approved and assessed according to the requirements of their Integrated Management System
  • A concrete improvement program has been put in place to further improve the level of sustainability of food purchasing as well as cooking processes (2021-2024 program).

  • Iberdrola and Sodexo have defined and displayed their sustainability charter for each of their catering services
  • Staff are made aware of good sustainable practices, responsible purchasing, healthy cooking, reducing energy and water consumption, as well as good waste management.

  • Consumers are encouraged to follow a healthy diet and to practice physical activity daily.
  • The nutritional values and allergens of the dishes are communicated.
  • Fair salaries are guaranteed and work-family balance is encouraged.
  • Continuous training of employees is encouraged and developed, for example in sustainable practices.
  • Sodexo has a working group to discuss and implement solutions related to sustainable development.
  • Iberdrola and Sodexo are part of the United Nations Global Compact.
  • Sodexo is actively involved in the fight against hunger, malnutrition and social inclusion

  • They carry out preventive and corrective maintenance of kitchen equipment.
  • An energy assessment of the premises has been carried out and possible improvements have been identified.
  • There is a general and automated control system of the buildings for the management of lighting and air conditioning, with the meaning of CAMPUS HOTEL.
  • The electrical energy source is 100% renewable.

  • Campus buildings are LEED GOLD certified.
  • A water and energy consumption reduction program has been implemented (2021-2024 program).
  • An improvement plan on purchases of cleaning products and materials has been implemented (2021-2024 program).
