The TOM Café, at the Olympic Museum in Lausanne, is certified EcoCook Sustainable Restaurant level 4 since November 2018, demonstrating its commitment to sustainable development.
EcoCook® is the only Swiss certification for the catering sector that recognizes the sustainable practices at all operational and management levels. For the customers, EcoCook® is a guarantee of these practices and commitments in terms of sustainability.
The EcoCook team made up of experts in sustainability, certification and communication, has developed the “EcoCook Sustainable Restaurant Certification Program” that allows restaurants to:

The EcoCook® Sustainable Restaurant Certification Program’s online platform provides a global overview of the restaurant’s level of sustainability, at any time, and of each establishment. Above are the scores of TOM Café (unit: EcoCookpoints).
Food and beverages, Menus and cooking
TOM Café’s Chef Pascal Beaud’huin, gives priority to local and seasonal products (at least 75% seasonal fruit and vegetables) and excludes endangered species and genetically modified organisms.
Their menu offers fresh products and healthily cooked products, without additives or taste enhancers, and offers a range of vegetarian dishes.
Communication and Social responsibility

Resources, Products and materials
TOM Café is implementing various measures to reduce their energy and water consumption, such as LED lighting, motion sensors and highly efficient appliances.
They have several renewable energy sources on site and 90% of their electricity comes from renewable sources.
TOM Café favors biodegradable cleaning products with a recognized ecolabel.
Waste, Compensation and donations
TOM Café makes sure that a maximum amount of waste is recycled, including food waste, which is recovered and transformed into biogas and compost.
They commit to control, register and reduce the quantities of waste generated, for example, through restrictions on single-use packaging.
They offset the carbon emissions of their operations and purchases.
